Wine Review: This dark ruby colored Cab opens with a mild black cherry bouquet with a hint of blueberry, musty tobacco, and menthol. On the palate, this wine is full bodied, very well balanced, and velvety. The flavor profile is an oak influenced plum. The finish is quite dry and its dusty tannins are quite grippy and shows good length. The panel suggested serving this Cab soon with a well marbled ribeye. Enjoy - KWGTP
Winemaker Notes: An epic wine with a classic nose and big Cabernet Sauvignon flavor. Spaulding is extremely dark and extracted wine with tremendous depth and concentration. Features bramble on the nose with a combination of blue and black fruit intertwined with dark chocolate. The finish is heavenly with blueberry and light cloves that lingers on. Big tannins make this wine one you can enjoy now through 2022 with proper aging.
