Wine Review: This dark red colored Cabernet Franc from Vinum is terrific. It opens with red cherry and blueberry bouquet. On the palate, this wine is full bodied, balanced and very smooth. The flavor profile is a tasty black cherry with notes of blueberry and gentle oak. I also detected hints of black pepper and cassis. The finish is dry and its moderate tannins show terrific length and staying power. I would pair this impressive Cab Franc with a well-marbled dry-aged ribeye steak. Enjoy - Ken
Winemaker Notes: This heavily extracted Cabernet Franc is from mountain fruit and has a deep dark plum color. Intense blueberry, cassis and huckleberry aromas jump out of the glass and are framed by subtle cinnamon notes. On the palate, the wine is silky in texture and then rolls into the varietal "franc" spice which is best described as fresh picked wild currants. The wine then displays it's silky and elegant tannins in the form of bittersweet chocolate, dark roast coffee and black cherry with integrated vanilla which was achieved by 26 months of French oak aging. This wine is an excellent pairing with braised short ribs over garlicky mashed potatoes and wilted spinach. While it drinks well on is youth while sturdy, but will mature gracefully for 20+ years.
