Wine Review: This deep ruby colored Cabernet Sauvignon for V. Sattui is a bold big boy. It opens with a currant and cinnamon stick bouquet with hints of fresh mint and blueberry. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, generous, and bright. The flavor profile is a tasty red currant, oak, and red plum blend with notes of stony minerality and red licorice. I also detected hints of green tea and cinnamon. The finish is very dry and its dusty tannins build-up and stick around for quite a while. I would decant this Cab for a while before serving it with a king cut prime rib. Enjoy – Ken
