Wine Review: This pale straw colored sparkling wine with very tiny bubbles was one of our top finishers in our first big blind tasting. It opens with a yeasty bread dough bouquet with hints of toast and apple. On the palate, this wine is light bodied, slightly acidic and crisp. The flavor profile is a mineral infused apple and pear blend with hints of stone fruit, toast and salty caramel. The finish is dry and its flavors fade away nicely. The panel suggested pairing the very nice sparkler with baked scrod with Ritz crackers or oysters. Enjoy – KWGTP
Winemaker Notes: The 2011 Blanc de Blancs has fresh aromas of green apple, pear, grapefruit and lime zest. The fruitful nose is complemented by developed nuances of "fresh from the oven" bread and candied citrus. Generous flavors of grapefruit, lime and pineapple are present in this wine. The palate is crisp on entry with a long, tangy and refreshing acidity.
