Wine Review: This pale straw colored Champagne was well received by the panel. It opens with a pleasant bread dough bouquet with a hint of peach and almond. On the palate, this wine is light bodied, slightly acidic and mouthwatering. The flavor profile is a tasty mineral infused lime with hints of white pepper, grapefruit, and green apple. The finish is dry and its flavors and acidity linger for quite some time. The panel suggested pairing this very good Champagne with bacon wrapped scallops or honey baked brie. Enjoy – KWGTP

Winemaker Notes: ON THE EYE: a clear, golden Champagne robe par excellence. Delicate and fine bubbles resulting from an extended maturation time. ON THE NOSE: fresh fruit dominates, with pear and russet apple, and a few hints of citrus fruits such as star fruit. The finish evokes fresh grapes, livened with hints of freshness and aniseed. ON THE PALATE: a structured, full-bodied and franc wine. A juicy, fleshy pear and golden grape texture. The finish narrows to citrus and grapefruit flavours. A wine with great fruit, a good mouthfeel and a harmonious balance.
