Wine Review: The panel was a bit split on this Cab. Those who loved it thought it was one of the top wines they covered this year. The other half thought it was a very big wine with lots of potential, be needed some time. Either way, this wine ended up with a big score and was highly recommended. It is slightly opaque and very dark ruby colored. It opens with a smoky oak and black raspberry bouquet with hints of honey and tobacco. On the palate, this wine is medium bodied, silky, luscious, and very fruit forward. The flavor profile is an extracted blackberry with notes of menthol and black pepper. It reminded a couple of panelist of Aussie Shiraz. The finish is quite dry and its dusty tannins are generous and lengthy. The panel suggested decanting this wine and serving it with leg of lamb or pot roast. Enjoy – KWGTP
Winemaker Notes: The 2007 D'Adamo Cabernet is an opaque ruby-purple color. The wine exhibits aromas of black cherry, huckleberry and mocha. The sweet ripe fruit coats the palate and is followed by layers of oak and vanilla. The tannins will continue to soften over the next several years.
