Wine Review: This midnight purple colored Cabernet Sauvignon based wine from Pellet Estate opens with a black currant and blackberry with hints of red plum and cedar. On the palate, this wine is full bodied with integrated medium acidity. The mouthfeel is balanced, round, bright, and fresh. The flavor profile is black currant and red plum blend with notes of cedar and cinnamon. We also detected some hints of red licorice, clove and tea. The finish is dry, and its flavors, acidity, and tannins build-up and last for a very long time. The Tasting Panel would decant pair this Cab based blend with Bistecca alla Fiorentina aka a Florentine steak or on its own. Enjoy - KWGTP
