Wine Review: This Champagne is pale yellow and displays very tiny bubbles. It opens with a mild lime bouquet with a hint of strawberry, stone fruit and toast. On the palate, this wine is medium bodied, balanced, and elegant. The flavor profile is a gentle light lime with hints of minerality, dough, and touch of green apple. The finish is dry and its drifts away nicely. The panel suggested that this Champagne would be perfect with Coquilles St. Jacques or stuffed mushrooms. Enjoy – KWGTP
Winemaker Notes: Appearance: Pale gold in colour, developing an abundant effervescence. Nose: Subtle preponderance of red fruit aromas, with frequent hints of delicately spiced dried fruit notes. Palate: Long and lingering finesse and freshness. Light in style. As an aperitif, best served at 7 - 8°C. With food, best served at 10 - 12°C.
