Wine Review: This pale straw colored Champagne opens with a faint yeasty biscuit bouquet with hints of almonds and strawberry. On the palate, this wine is light bodied, soft, elegant and its bubbles disappear quickly. The flavor profile is a mild lemon with hints of Mandarin orange, apple, and honey. The finish is dry and drifts away nicely. This Champagne is versatile and very food friendly. The panel suggested pairing this wine with baked Dover sole or baked brie with a fig jam. Enjoy - KWGTP
Winemaker Notes: Appearance: Delicate golden glints and abundant, delicate bubbles. Nose: White flower notes of hawthorn and acacia accompanied by more subtle citrus fruit, pear and even lime blossom aromas. Palate: Full on the palate. Lively, fresh and powerful on the attack, with a complex finish of citrus fruits and honey. As an aperitif, best served at 7 - 8°C with pear and foie gras verrines With food, best served at 10 - 12°C with pan-fried scallops and tomato and mango tartare with basil.
