Wine Review: This straw yellow colored Champagne opens with a mild strawberry, wet stone, and floral bouquet. A couple of reviewers also detected some fig. On the palate, this wine is medium bodied, balanced, and a little effervescent. The flavor profile is a saline and lemony citrus blend with notes of toast. The finish is dry, but brief. The panel noted that this Champagne improved with some air and was quite food friendly. Some of the pairing suggestions were steamed mussels in a garlic broth or sharp cheeses with raspberries. Winemaker Notes: Pale yellow in colour, with distinctive silver glints and a well-balanced ribbon of bubbles. The initial impression portrays a fresh and pleasing character, revealing tropical fruit flavours and almonds. Further investigation reveals a complex and intense bouquet.
