Wine Review: This white gold colored Champagne opens with a fragrant tangerine and sourdough bread bouquet with hints of walnut. On the palate, this wine is medium bodied, displays nice palate coverage and is savory. The flavor profile is a white truffle and tangerine blend with a hint of raisin, lemon, and almond. The finish is dry and its flavors linger nicely after the wine is gone. The panel had several suggestions for this Champagne, but the consensus settled on grilled rainbow trout with a wild mushroom risotto or pan seared tuna. Enjoy - KWGTP
Winemaker Notes: Extremely clear, with a gently mischievous foam, fine continuous bubbles and a superb sparkle, all of which underscore the bright golden yellow robe of the wine. Generous, with abundant hints of honey, spices, yellow fleshy fruit (apricots, peaches) and vanilla. The woody notes remain subtle, and never dominate: the smoky nuances strengthen the complexity of this wine's bouquet. Based on a balance between freshness and amplitude, not to say unctuousness. The striking and well structured winey finale suggests it will be a good wine for laying down.
