Wine Review: This classic straw colored Champagne tied for first place in our first big blind tasting of sparklers. It opens with a mild dough like bouquet with hints of honey and candied apricots. On the palate, this wine is light bodied, balanced, and savory. The flavor profile is honey with hints of Anjou pear, toast, and Key lime .The finish is dry and fades away nicely. The panel suggested pairing this gem with scallop ceviche or caviar with toast points. Enjoy - KWGTP
Winemaker Notes: 11 - 12 Grand Crus are used in the Palmes d'Or blend. Appearance: Pronounced golden yellow, clear and bright. Delicate gossamer bubbles softly crackle; lively, majestic sustained mousse. Nose: Primary fruit aromas of white pear and peach and walnut and apricot dried fruit notes. More intense secondary aromas reveal spicy notes of pepper and ginger and red fruits subtly interweaving with the primary aromas. Palate: Clean and direct on the attack, delicate bubbles reveal magnificent mineral quality. Great structure on the palate, incredibly long on the finish and unforgettable elegance. Best served at 10 - 12° C.
