Wine Review: This pale yellow colored sparkler finished in 3rd place in our recent blind tasting. It opens with an attractive honey and dough like bouquet with a hint of truffles and petrol. On the palate, this wine is medium bodied, balanced, and bubbly. The flavor profile is a mineral infused lime with notes of dough and green apple. The finish is rather dry and it lingers nicely. One panelist suggested pairing it with pate. Enjoy - KWGTP
Winemaker Notes: This prestigious tête de cuvée honors the visionary work of Guy Devaux. The 2001 DVX offers a brilliant golden-yellow hue with a gentle stream of tiny bubbles. As is the tradition with DVX, this release is complex, rich and nicely balanced. Toasted brioche with a hint of oak spice greet you on the nose, followed by green apple, ripe freestone peaches and fresh raspberry on the palate. Enjoy a lovely vanilla creaminess on the mid palate that ends with a lingering, refreshing finish.
