Wine Review: This Cabernet Sauvignon from the famed To Kalon Vineyard is Excellent. It opens with a fragrant black cherry and craisin bouquet with hints of blueberry. On the palate, this wine is full bodied, balanced and smooth. The flavor profile is a pleasant blend of black cherry and plum with notes of nicely integrated mild minerality and gentle oak. I also detected a hint of boysenberry in the background. The finish is dry and its moderate well managed tannins drift away nicely. This impressive Cabernet would pair nicely with beef tenderloin. Winemaker Notes: Our 2013 Knights Bridge To Kalon fills the senses with notes of baking spices, dried cherry and red currant, cocoa powder, violets and cedar. The wine expands on the palate with great middle-mouth richness typical of Napa Valley fruit with lingering notes of sweet dark fruits, coffee, and hints of spice. This big wine pairs nicely with espresso braised short ribs atop a bed of polenta, or a hearty Portobello mushroom and Gorgonzola risotto
