Wine Review: This faint pale yellow colored "Extra Brut" sparkler from J Vineyards displays lots of very fine small bubbles. It opens with a faint pear bouquet with a hint of lemon and toasted bread. On the palate, this wine is medium bodied, semi-sweet and savory. The flavor profile is a mineral infused lemon and apple blend with notes of stone fruit. Its medium finish is dry and its flavors fade away nicely. The panel suggested pairing this sparkler with sliced French bread topped with fresh mozzarella, ripe tomato, basil and balsamic. Winemaker Notes: This wine is what creme brulee tastes like, only considerably less sweet. Our special J Cuvee XB features a noticeable yeasty brioche and light almond nut on the nose, with a juicy lemon/lime rind zest. It is perfect as an aperitif or first-course accompaniment to Dungeness crab or thinly sliced sashimi over a bed of lightly dressed mixed greens. Try it with crudo yellowtail topped with ginger, lime and avocado.
