Wine Review: This brass colored Champagne opens with medium sized bubbles and a mild bread dough and gentle lemon chiffon bouquet. On the palate, this wine is medium bodied, balanced, and easy going. The flavor profile is a mild strawberry and mellow lemon with nicely integrated minerality with a hint of honey. The finish is dry and its flavors fade quickly. The panel felt this Champagne is rather food friendly and would pair nicely with grilled swordfish or sliced extra sharp Manchego cheese. Enjoy - KWGTP
Winemaker Notes: Pale gold/yellow in colour, light, and crystalline, fizzing with thousands of bubbles. An open and expressive nose, with rich flavours of plump, ripe yellow stone fruit such as apricots or peaches or even dried fruit (almonds). From the first sip the palate is rich, rounded and powerful. It shows a lovely development with a soft freshness combined with a light salty tang. Perfect as a refreshing accompaniment to simple grilled meat dishes in the summer heat. The light salty tang on the champagne's finish reflects wonderfully with crisp, pan-fried garden vegetables, cooked and seasoned a la Passard.
