Wine Review: A crisp and elegant French Champagne! In the glass it is a brilliant deep salmon color with fine bubbles, and has aromas of bread dough, rose petals, strawberry, red raspberry, and vanilla. On the palate, there are soft bubbles, a slightly creamy and wonderfully textured mouthfeel, medium-minus body, medium-plus acidity, dry with beautiful balance. Flavors of sourdough bread, strawberry, and white peach, with notes of toasted almond and stony minerality. Crisp lingering finish. No need for any food at all. However, with food it would pair well with salmon en croute. - Mark

Smell: Very fresh nose. Large range of small red fruits including mulberry, raspberry, and red currant.
Taste: Lovely intense aromas. A positive first impression in the mouth with flavors of ripe red fruit. Harmonious balance between roundness and freshness.
Wine & Food Pairing: This is a very engaging Champagne to be served with an assortment of wild berries and a light Sabayon or a fresh fruit soup. Also lovely with quail, game with cranberries or even a foie gras.
