Wine Review: This almost clear Champagne, with small streaming bubbles opens with an attractive quince and lime bouquet with a hint of wet slate. On the palate, this wine is light bodied, nicely balanced and fresh. The flavor profile is a tasty mild lime and mineral blend with notes of mild bread dough. I also detected hints of tangerine. The finish is dry and its flavors drift away nicely. I would pair this very nice Champagne with bacon wrapped scallops. Enjoy - Ken
