Wine Review: This very pale peach colored sparkler with lots of bubbles opens with a mild strawberry bouquet. On the palate, this sparkler is crisp and slightly acidic. The flavor profile is a tart green apple with notes of minerality. The finish is dry and its mineral notes linger. This sparkler is a fine entry level crowd pleaser. It will pair well with bacon wrapped scallops. Enjoy - Ken
Winemaker Notes: Rose sparkling wines are original not only because of their color, but also their vinous character. Blanc de Noirs is a beautiful salmon pink wine, with a persistent column of small bubbles. A delicate sparkler, with strawberry impressions coming through in the nose, and on the palate.
