Wine Review: This almost clear colored Sparkler with a pink rose hue opens with a faint strawberry bouquet with a hint of apricot. On the palate, this wine is medium bodied with a nice blend of acidity and fruit. The flavor profile is a mild mineral infused gentle tart lemon with notes of tangerine and a hint of Pink Lady apples. The finish is dry and a little sharp acidity lingers and lasts for a little while. The panel suggested pairing this very nice Finger Lakes sparkler with steamed mussels or cheese fondue. Winemaker Notes: Dry with crisp mouth feel. Medium bodied and medium intensity with dominant characters of lime, apricot, fresh herbs, orange candy and ginger; supported by sour dough and mineral undertones. The wine has a broad palate with a long finish and an elegant mousse. Pair with seafood sushi and sashimi, fresh oysters and ceviche. Drink now or cellar until 2017.
