Wine Review: This opaque and very dark ruby colored Cabernet Sauvignon from Canvasback opens with a black currant and cranberry bouquet with hints of red licorice and potpourri. On the palate, this wine is medium plus bodied with medium acidity. The mouthfeel is balanced, round, and bright. The flavor profile is currant, mocha, and toasted coconut blend with notes of ripe plum, oak, and crushed stone. We also detected hints of Earl Grey tea and touch of dark chocolate in the mix. The finish is dry with integrated fine-grained tannins. The Tasting Panel would decant this Cab to integrate the favors before having it on its own. With food we suggest pairing it with fall-apart roasted pork shoulder with rosemary, mustard, and garlic or a New York strip steak. Enjoy – KWGTP
