Wine Review: Always one of my favorites of the bunch, the Besserat de Bellefon "Cuvee des Moines Brut Blanc de Blancs" is as classic as Champagne can get. Toasted almonds, lilac petals, sweet apricot, and candied orange leap from the glass. On the palate, this Champagne is just as exciting displaying additional notes of brioche, roasted cashews, and creme brulee. The finish is characterized by the bright acidity and long lasting flavors. Drink now through 2020. Pairs beautifully with bay oysters. - Nicolay.
Winemaker Notes: To The Eye: The color is a very pure bright yellow. A froth of light bubbles forming a discreet ring in the glass. On The Nose: Intense nose revealing fresh citrus notes admirably matched with floral notes (honeysuckle, acacia) and well-developed toasted aromas. On The Palate: The initial impact is fresh and lively, and the wine is full bodied with a very silky structure, in full harmony with the complex aromas. Definite fresh fruit notes of apricot, pineapple, and bush peach. A long and assertive finish, boding well for this elegant and distinguished wine. Pairing: A Champagne for special occasions, an ideal accompaniment to light dishes, seafood and fish.
