Wine Review: This straw colored Champagne did very well with the panel. Despite not displaying many bubbles, it was impressive. It opens with a yeasty bread dough and almond like bouquet with a hint of apricot. On the palate this wine is medium bodied, creamy, smooth and surprisingly effervescent. It has a classic Champagne profile with mineral infused light lemon flavors with hints of strawberry and green apple. The finish is dry and its flavors and a bit of the acidity remains in the end. The panel felt this Champagne would do well with food. They suggested swordfish kabobs with wild mushroom risotto. Enjoy - KWGTP
Winemaker Notes: This Champagne, dressed in a pure vibrant yellow, offers a citrus nose combined with floral notes of honeysuckle and acacia, followed by the first hints of a toasty continuation. In the month it is well structured and well-rounded. Chardonnay provides mineral notes that blend perfectly with the hints of dried fruits, apricot in particular, before giving way to honey flavours. The finish is fresh, light and persistent.
