Wine Review: This dark ruby colored Cab opens with an attractive black cherry bouquet with a hint of black pepper and pleasant blackberries. On the palate, this wine is medium bodied, balanced, and smooth. The flavor profile is a fruit forward ripe and concentrated juicy blackberry with hints of anise. The finish is dry and its moderate tannins stick around for quite sometime. This juicy Cab would pair well with duck with a fruit glaze topping. Enjoy - Ken
Winemaker Notes: Laurie blended the lots of Cabernet Sauvignon to highlight Knights Valley’s characteristically bright black cherry fruit. A bit of Merlot was added to round out the mid-palate, and a touch of Cabernet Franc lifts the aromatics of the wine and delivers an elegant finish. The 2006 Knights Valley has a vibrant fruit core, hints of brown spice and pink peppercorns, and a lingering finish of ripe black fruit.
