Wine Review: This dark ruby colored Cab opens with an attractive red currant like bouquet with hints of menthol and fresh sawdust. On the palate, this wine is medium bodied, balanced, very juicy, and fruit forward. It has a lot of Merlot tendencies which makes it attractive at a young age. The flavor profile is a savory cedar wood infused red cherry with a dash of black pepper. The finish is rather dry and its substantial tannins are puckery and linger nicely. Given the tannins in this wine, I would pair it with a thick cut of prime rib. Enjoy – Ken
Winemaker Notes: This new release may be the most complex Cab in recent years, the result of a growing season that proved perfect for Cabernet. The 2007 shows a lot of purity, delivering refined aromas of black cherry, plum and cassis and flavors of plum, coffee and dark chocolate. One of the hallmarks of this Cab is that it shows some softness on the front end, making the wine so eminently drinkable upon release. That is very true with the 2007, yet the wine has plenty of structure to make it a good candidate for 10 to 15 years of cellaring. Food Pairing: Cabernet and steak…could there be a better match.
