Wine Review: This Cab offering from Washington State has a lot of Old World influences going on for a New World wine. It is very dark ruby in color and opens with a dusty cherry bouquet and displays oak and coffee infused aromas. On the palate, this medium bodied wine is heavy on the spice with tart cherry and espresso like flavors. There are also notes of dark chocolate blended in as well. The finish is dry and dusty. The panel would have this wine with a hearty meal like shepherds pie or braised beef short ribs in a brown sauce. Enjoy - KWGTP
Winemaker Notes: Yoga for the Palate! Permit this wine to open for awhile. As the name Helix implies, let this Cabernet go round and round on your palate while sitting straight and relaxed. Without swallowing, slowly inhale once or twice to unravel the black raspberry, plum and cassis layered with caramelized oak, a barely perceptible hint of clove and very fine tannins. Exhale.
