Wine Review: This dark ruby Cab from Paso Robles opens with a spicy blackberry like bouquet with hints of menthol. On the palate, this medium bodied wine is balanced, shows decent structure with savory and spicy raspberry flavors with hints of cherry vanilla and a touch of oak. The finish is dry and has noticeable tannins that are quite extended. The panel would enjoy this wine with meat lasagna or shepherds pie. Enjoy – KWGTP
Winemaker Notes: The 2005 vintage was as good as it could get. We had an abundance of fruit, more than we had expected, and the quality of the fruit was superb with intense richness in flavor and color. And, as if it could get any better, the richness in tannin makes these wines more able to be aged. This will result in softer and more rounded velvety characters over time. The nose of this Cabernet Sauvignon is chock-full of briary blackberries and jam underscored by subtle hints of oak. Loads of dark berries explode on the palate enhanced by rich flavors of tar, coffee, tobacco, and molasses. The dry finish lingers with the essence of tobacco and smoke.
