Wine Review: We recent sat down with Marcelo Papa to try his 2007 Casillero del Diablo red line up. He told us that 2007 is going to be a historic vintage for Chile. If his entry level offerings are any indication of the premium wines to come, I would have to agree. This entry level Cab is very dark ruby colored. It opens with a mild black cherry bouquet. On the palate, this medium bodied wine is nicely balanced, smooth, with very pleasant spicy ripe black cherry flavors with hints of plums. The finish is dry with soft tannins that linger slightly. This would be a Very Good wine to pair with barbecue steak tips and a terrific glass pour at your favorite wine bar. Enjoy - Ken
Winemaker Notes: Color: Bright, dark plum. Bouquet: Appealing ripe cherries, black currant and dark plums with a touch of vanilla and toasted oak. Taste: Medium bodied with smooth and friendly tannins. Hints of plums and cherries and a generous touch of toasted American oak.
