Wine Review: This pale straw-colored Sauvignon Blanc opens with an earthy citrus and quince bouquet. On the palate, this wine is medium bodied with balanced acidity. The mouthfeel is smooth, crisp, and with. The flavor profile is tangy lemon, pear, green apple, and ripe pineapple blend with notes of honey and slightly spicy green pepper. The finish is dry, and a little grapefruit shows up at the very end to linger nicely. I would recommend pairing this Australian Sauvignon Blanc with pasta carbonara. – Joe
Winemaker Notes: A flashy Sauvignon Blanc offering lashings of tropicals such as passionfruit and gooseberry on the highly aromatic nose, boosted by an undercurrent of fresh cut grass. The palate is refreshingly crisp and minerally. Vibrant citrus like acid is a real feature accompanied by generous flavor and a hint of added texture through some very light-handed oak treatment and a small dose of wild ferment.
