Wine Review: This medium garnet-colored Cabernet Sauvignon from ZD opens with a black cherry and craisin bouquet with hints of cassis, cedar, and violet. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, round, approachable, and gentle for a young Cab. The flavor profile is cassis and gentle raspberry blend with notes of cedar and stone dust. We also detected hints of menthol, cranberry and black tea. The finish is dry, and its managed dusty tannins linger and are nicely extended. The Panel would suggest drinking this wine in the relative near term. We would pair this Cab with braised short ribs or with a grilled hanger steak. Enjoy – KWGTP
Winemaker Notes: This 2021 Napa Valley Cabernet has a beautiful deep ruby color and complex aromas of cassis, black cherry, and clove with subtle hints of baking spice, cola, and toasty vanilla. The palate expresses an ample core of red-black fruits with soft tannins and moderate acidity that is perfectly balanced and integrated with the toasted American Oak.
