Wine Review: This midnight purple-colored Cabernet Sauvignon from ZD opens with an intense ripe blackberry and black cherry bouquet with hints of anise, violets, and leather books. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, round, seamless and bright. The flavor profile is black licorice and blackberry blend with notes of stony minerality, sarsaparilla soda, and black tea. We also detected hints of oak, clove, and hot cinnamon. The finish is dry and its mild settled tannins and flavors drift away nicely. The Tasting Panel would pair Enjoy this dense flavored Cab with on its own. With food, we would pair it with a prime rib. Winemaker Notes: This wine is showing beautifully with aromas of blackberry, cassis, and strawberry jam mingled with savory notes of anise, allspice, cola, and luscious vanilla. The palate is intensely layered with ripe, dark fruits including plum, dark cherries, and a hint of cocoa. The soft yet plentiful tannins envelope the ripe core of fruit and lead to an incredibly long, silky finish. Only 11 barrels of this wine were produced. - Chris Pisani, Senior Winemaker
