Wine Review: This dark pink colored wine from Yorkville opens with a strawberry bouquet with hints of smoke and apple. On the palate, this wine is medium bodied, slightly acidic and refreshing. The flavor profile is mild mineral infused strawberry with hints of red cherry. The finish is dry and its flavors and acidity lingers nicely. This Rose would be a good beach wine served slightly chilled on a hot day. Enjoy with sharp cheddar cheese. Enjoy - Ken
Winemaker Notes: There are three ways to make a Rosé. The first is to mix a red and a white resulting in a pink wine. The second is the saignee method (French again!) where free-run juice is bled from the crushed fruit before the juice has taken on the full red color. The third method is to pick the fruit dedicated to a Rose, or an "intentional" Rose. This is what we chose to do as it allows us to pick grapes from a selected area of the vineyard at a suitable Brix level, which is typically less ripe than for a typical table red wine therefore retaining delicacy and fresh brightness. After gently crushing, the grapes the skins are left in contact just long enough to achieve the exact flavor and depth of color we think optimal.
