Wine Review: This straw-colored Chardonnay from Chablis opens with a mild lemon bouquet with hints of chalk and pineapple. On the palate, this wine is medium bodied and nicely balanced with pleasant acidity. The flavor profile is a mild limestone and light lemon blend with notes of white peach. I also detected hints of quince and pineapple. The finish is dry and its flavors fade away nicely. This Chablis is very food friendly. It would pair well with a baked cod with Ritz cracker topping. Winemaker Notes: Very fresh bouquet with notes of citrus and white-fleshed fruit. Fresh and supple, the wine is marked by mineral notes that are typical of the appellation. Pair with grilled fish served with a light sauce; oysters, sushi or scallops carpaccio.
