Wine Review: This very very dark colored Cabernet opens with a fragrant black raspberry bouquet. On the palate, this wine is medium bodied, balanced and very approachable. The flavor profile is an oak influenced black raspberry with notes of black currant. I also detected a touch of black pepper. The finish dry and its big tannins are rather sticky. There is also some ripe fruit that sticks around as well. This wine will benefit from air and cellar time. I would pair this Cab with short ribs in the near term. Enjoy – Ken
Winemaker Notes: The 2008 vintage is a blend of 79% Cabernet Sauvignon, 18% Merlot, and 3% Cabernet Franc wines. This Bordeaux style blend marries the diversity of the three varietals into a compatible union that enhances the virtues of each individual wine. Black fruits and vanilla are prominent aromas. The grape lots were picked separately based on optimum maturity and following fermentation were aged in French oak barrels for 24 months, 50% of which were new.
