Wine Review: This dark ruby colored organic Cab seems to be Very Good every year. It opens with a black raspberry bouquet with a hint of black cherry and smoke. On the palate, this wine is medium bodied, balanced, and quite mellow and round in the mouth. The flavor profile is a mild black raspberry with hints of black cherry, cinnamon, and black pepper. The finish is dry and its dusty tannins are sticky and linger for quite a while. The panel suggested enjoying this Cab soon with some slow cooked beef brisket or braised short ribs. Enjoy - KWGTP
