Wine Review: This dark ruby colored Cabernet Sauvignon from Paso is impressive and a good value. It opens with a blueberry bouquet with a hint of leather. On the palate, this wine is full bodied, smooth and silky. The flavor profile is a tasty blueberry with notes of gentle oak and mild minerality. I also detected hints of black currant. The finish is dry and its flavors and its moderate tannins fade away nicely. I would pair this very nice Cab with a filet mignon. Enjoy - Ken
Winemaker Notes: Color: Garnet Aroma: Dark currants with hints of fine tobacco and sandalwood Taste: Medium-bodied; rich dark fruit; complex with a structured, creamy finish Pairing Suggestions: Flank steak, braised beef, hearty dishes, or pasta with mushrooms
