Wine Review: This wine presents with brilliant peach and pink salmon hues and uniform small bubbles. Both the nose and palate reveal fresh peach, apricot and candied ginger aromas and flavors. Upon entry, the medium-bodied wine has a very smooth mouthfeel that builds to a creamy stone-fruit finish with traces of hazelnut paste and graphite. There is just enough zesty acidity to tame the sweet and juicy flavors and achieve balance. Serve with soft cheeses that have a strong taste like Epoisses de Bourgogne. This also makes a distinctive mimosa for brunch with friends. – Jeoff
