Wine Review: This dark red colored Cabernet Sauvignon opens with cedar and black currant bouquet with hints of anise. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, super smooth, and delicate. The flavor profile is black tea and mild cassis blend with notes of graphite and cherry-vanilla. We also detected hints of black licorice. The finish is dry, and its well-managed refined tannins are very nicely sustained. We would pair this very nice Cab with a New York strip steak. Enjoy – Ken
Winemaker Notes: A bright ruby red color immediately shines from the glass. Aromatically-a roomful of red roses jump to your nose, red licorice, black raspberries, cocoa powder, crushed black peppercorns and warm toasted coconut. Texturally refined and elegant, medium body, soft-melted polished tannins. The flavors evolve in the mouth from red cherry with a light note of green olive, Nantucket beach plum, fresh herbs like thyme and rosemary, chocolate cherry cordial candies, cedar, anise, and cardamom. A very multi-dimensional wine. The finish is smooth as silk...be careful, you will love this wine! The longer you wait the more you will discover what it has to offer. Food pairing recommendations are grilled lamb chops, ripe cheeses, or beef wellington.
