Wine Review: This very dark red colored Cabernet Sauvignon opens with a black currant bouquet with hints of black licorice and menthol. On the palate, this wine is medium bodied, balanced, smooth and juicy. The flavor profile is a blackberry and black cherry blend with notes of black licorice and black pepper. We also detected hints of fine minerality, dark chocolate and blueberry. The finish is dry and its moderate tannins build-up and stick around for a while. The Panel felt this that this Cab improved with some air mixed in. Decant it and serve it with some fork tender slow braised beef with shallot, carrot, garlic and Burgundy mushroom ragu tossed with rigatoni pasta. Enjoy - KWGTP
Winemaker Notes: The 2017 vintage was a storied one...luckily we harvested our Cabernet Sauvignon grapes before the fires started. This wine is gorgeous! The bouquet is loaded with ripe Bing and rainier cherries. What a crowd pleaser. Brilliant acidity and a delicate richness make this wine one to enjoy now and over the next 8 years.
