Wine Review: This deep violet colored Cabernet Sauvignon from V. Sattui opens with a fragrant blueberry and brownie batter bouquet with hints of cedar, violets, and black cherry. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, round, dense, and fresh. The flavor profile is a boysenberry and stony minerality blend with notes of cedar and black plum. We also detected hints of red cherry, black tea, and licorice. The finish is dry, and its flavors, acidity, and its dusty tannins linger and last for a while. The Tasting Panel would pair this Cab with a bacon encrusted beef tenderloin or beef brisket.
