Wine Review: This hazy and dark garnet colored Cabernet Sauvignon from V. Sattui opens with a cassis and black cherry bouquet with hints of cedar and violet. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, very smooth, and lush. The flavor profile is tasty black cherry and gentle cedar blend with notes of blueberry and cassis. We also detected hints of muddled mint, black tea stone dust and a touch of black licorice. The finish is dry and its flavors, acidity, and moderate polished tannins stick around for quite a while. The Tasting Panel could certainly enjoy this excellent Cab on its own. With food we would pair it with Lucia's Manzo Brasato con Funghi which is fork tender slow braised beef, shallot, carrot, garlic, and a burgundy mushroom ragu tossed with rigatoni pasta.
