Wine Review: This very dark red colored Cabernet Sauvignon from Truchard opens with fragrant cassis and boysenberry bouquet with hints of oak. On the palate, this wine is medium plus bodied with medium acidity. We also found it to be smooth and juicy. The flavor profile is a tasty blend of black cherry, black tea, tobacco, oak and minerality. We also detected notes of black raspberry and hint of black olive. The finish was dry and its dusty tannins build-up and last for a very long time. This Cab should be decanted in the near term as aeration does settle the tannins. The Panel suggested pairing this wine with a rack of lamb or New York strip steak. Enjoy - KWGTP
Winemaker Notes: Intense aromas of black plum, raspberry, and cassis; with a hint of cedar and vanilla. The mouth is layered with bright flavors of ripe cherry, red currants, and berry jam. Firm tannins focus the palate and provide a lengthy finish of spice and red fruit. This wine is drinkable now but will reward with careful cellaring for the next 10 - 15 years.
