Wine Review: The 2023 Trapiche “Oak Cask” Cabernet Sauvignon is semi-opaque dark purple in color with bright ruby edges. On the nose, aromas of toasted rye bread and violets jump from the glass, followed by notes of warm caramel and roasted almonds. On the palate, this wine is light to medium-bodied with tart flavors of red currant, sour cherry, and pomegranate. Bright mineral-driven acidity and brawny tannins provide additional structure to the bold oak treatment. The finish is dry and medium in length. Food friendly, versatile, and with a very approachable price point. This Cab would pair very well with pork adobo or beef barbacoa. - Mark
