Wine Review: This dark purple colored Cabernet Sauvignon from Trapiche opens with a black currant, menthol, and fig bouquet with hints of forest floor and violets. On the palate, this wine is medium plus bodied with medium plus acidity. The mouthfeel is nicely balanced, super smooth, viscous, and rich. The flavor profile is black currant and toasted oak blend with stewed black plum and graphite. We also detected hints of menthol and black tea. The finish is dry and its dusty tannins build-up and stick around for quite some time. The Tasting Panel would suggest pairing this Cab with Roy's rib roast or slow cooked beef brisket.
