Wine Review: This straw-colored Pecorino opens with a honeydew melon and light lemon verbena bouquet with hints of apricot. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is balanced, round, slightly viscous, and shows a bit of freshness. The flavor profile is a ginger and lychee blend with notes of saline and green apple. I also detected some hints of green tea, pineapple, and lime zest. The finish is dry, pleasant, and lingers nicely. This Pecorino would pair well with backed walleye. Enjoy - Ken
Winemaker Notes: It appears bright straw yellow in color. On the nose, it is delicate with hints of white flowers and citrus, with a final note of pineapple and a vegetal undertone reminiscent of freshly mown grass. On the palate, it is a crisp and well-balanced wine that reveals flavors of lychee and citrus. The result is a wine with harmonious freshness, minerality, and a long persistence. The Poggio Salaia pairs perfectly with pasta dishes featuring shellfish or white meat-based dishes.
