Wine Review: This pale straw colored Carricante from Sicily is very good. It opens with a gentle white floral bouquet with a hint of chamomile. On the palate, this wine is full bodied, balanced and on the rich side. The flavor profile is a saline and chalky mineral blend with notes of green apple and white pepper. There is a hint of green tea mixed in as well. The finish is dry and nicely extended. This wine is very versatile and food friendly. I would pair it with poached cod with a lemon sauce. Enjoy – Ken
