Wine Review: This midnight purple colored Cabernet Sauvignon from Tom Eddy was well received by the Tasting Panel. It opens with a black cherry bouquet with hints of pencil lead, eucalyptus and oak. On the palate, this wine is medium bodied, balanced, elegant and smooth. A nice reflection of the soft 2014 vintage. The flavor profile is a very tasty black currant with notes of graphite minerality. We also detected hints of vanilla, plum and toasted oak. The finish is dry and its refined tannins drift away nicely. The Panel suggested pairing this Cab with a filet mignon. Enjoy – KWGTP
Winemaker Notes: Our flagship Cabernet is a blend from three Napa hillside Cab vineyards that bring perfect balance as well as seductive flavor complexity. The bouquet is rife with chocolate, espresso bean and black cherry with subtle background notes of leather, black olive and anise. The flavor harmony brought by these dynamic qualities is further enhanced with vanilla bean and spice that linger for an impossibly long finish. The velvety mouthfeel permeates the palate as supple tannin coat and caress with every sip. The wine is deeply concentrated and shows great power but is very approachable showing classic Tom Eddy Cab elegance. This is a great food wine that will age and evolve beautifully for decades to come.
