Wine Review: This ruby colored Cabernet Sauvignon from Napa Valley opens with a mild black cherry bouquet with hints of black currant and anise. On the palate, this wine is medium bodied, nicely balanced and smooth. The flavor profile is a plum and gentle black currant blend with notes of nicely integrated mild oak. I also detected some black licorice, a little minerlity and a hint of strawberry towards the end. The finish is dry and its flavors and medium tannins linger nicely. This is a very food friendly Cab that is very versatile and really evolves on day two. So I would decant for at least 30 minutes on day one and pair it with Kobe beef sliders or a strip steak. Day two, just open and enjoy! – Ken
Winemaker Notes: The 2013 Elodian Cab immediately impresses with its gorgeous garnet hue. The complex bouquet exudes intense black cherry, cassis and anise aromas with a subtle hint of vanilla, black currants and black olives. The wine's texture is exquisite, yielding velvety tannins with a rich middle mouth and balanced acidity. The finish is long and enticing as flavors of dried cherry and dried cranberry commingle with vanilla bean and cedar. Perfectly positioned for long-ageing, this wine is delicious now and will be for many years to come.
