Wine Review: This very dark ruby colored Cabernet Sauvignon from Tom Eddy is Excellent. It opens with a black current and black cherry bouquet with hints of menthol and cedar. On the palate, this wine is medium bodied, nicely balanced and very smooth. The flavor profile is terrific. It features very tasty mild mineral infused black currant flavors with notes of cedar, black olive and plum. No one flavor dominates the other as they all meld together perfectly. The finish is dry and its moderate tannins are well managed and stick around for quite some time. This Cab is very food friendly and would pair perfectly with a dry aged ribeye in the near term. Winemaker Notes: Classic aromas of black currant, cedar, anise, and black olive are pervasive on the nose of the 2010 Tom Eddy Cab Sauv. Subtle and succulent vanilla bean commingles with blackberry and cherry flavors bestow a long, enticing finish on the palate. Out signature lean acidity accentuates many delicious foods and delivers a clean, lip-smacking sensation with every quaff. A kiss of Malbec adds complexity. The structure is bold with smooth tannins and a rich middle. The structure and acidity of the wine will ensure that it ages beautifully for at least another couple of decades.
