Wine Review: This opaque and very dark purple colored Cabernet is amazing. Especially on day two after it opens up a bit. On the nose, it opens with a very inviting and appealing black cherry bouquet with a hint of blueberry and hint of leather. On the palate, this wine is full bodied, smooth as silk and very well balanced. The flavor profile is old school and very much like a Bordeaux wine. It is gentle black currant with several other flavors that give it nice complexity. Those other flavors are blackberry, licorice, cedar, and a touch of minerality. It finishes dry and its moderate old oak tannins are well managed and show very good length. This wine would be wonderful with food. I would pair it with a thick ribeye with someone real special. Enjoy - Ken
Winemaker Notes: The 2005 Tom Eddy Cabernet Sauvignon is the embodiment of a classic Napa Valley Mountain Cabernet. The aroma is loaded with bing cherry, blackberry and cedar with subtle hints of vanilla and spice. On the palate, the dark fruit flavors blend with concentrated red raspberry and cassis. This wine portrays the perfect balance of a soft, elegant-style old world red with the backbone and structure of a big Napa Cab. This allows for immediate enjoyment as well as great age ability for decades to come.
